Faugères


Château Chênaie

The Château Chênaie takes its name from the castle full of history which the Chabbert family has made its trademark. Dating back to the 12th century, this stronghold was, in the Middle Ages, a look-out post for the route between the mountain to the Mediterranean seaside.

It’s in this historical place that the Chabbert family produces wine for 6 generations.
The vines are between 35 and 85 years old. They’ve been planted against the slope, with southern exposure, on a schist terroir.
The grapes are all harvested manually at their optimum maturity.

The vinification takes place in the cellar under the castle. All the careful work in the vines allows the brother Eric and Cyril Chabbert to propose cuvees characterized by a perfect balance between freshness, elegance and strength in the mouth, with remarkably fine and velvety tannins.

Manual harvest, hand sorting and destemming.
Average yield: 35Hl / Ha.
"Saignée" after 6 hours of skin maceration.
Gentle settling and fermentation occurs.

Tasting notes:
The nose is very expressive, marked with aromas of strawberry and raspberry, but also with some menthol notes.
The palate is fresh and slightly acidic.
 



DRY WHITE WINES

Mostly Roussanne completed with Rolle

Harvest and vinification:
Work on the soil and tillage only during the vegetative cycle of the vine for the Rolle, and on alternate row for the Roussanne.
Manual harvest, hand sorting and destemming.
Average yield: 38Hl / Ha.
Press after 8 hours of skin maceration.
Four month of fermentation and maturing on fine lees.

Tasting notes:
The colour is brillant and limpid.
Intense nose with exotic aromas of white peach and apricot.
The palate is full and delicate, offering some ananas flavours.
 




Les Douves Blanches

Grape varieties:
Mostly Roussanne completed with Viognier and Rolle

Harvest and vinification:
Work on the soil and tillage only during the vegetative cycle of the vine for the Rolle and Viognier, and on alternate row for the Roussanne.
Manual harvest, hand sorting and destemming.
Average yield: 25Hl / Ha.
Press after 8 hours of skin maceration.
Gentle settling and fermentation occurs.

Tasting notes:
The nose is delicately toasted, with candied fruit aromas (abricot).
The wine is smooth and invigorating on the palate, presenting pear and caramel notes.
 




RED WINES

Carignan, Grenache, Mourvèdre, Syrah

Harvest and vinification:
Work on the soil and tillage only during the vegetative cycle of the vine.
Manual harvest, hand sorting and destemming.
Average yield: 40Hl / Ha.
For the Syrah and Grenache, the harvest are destemmed.
The vatting last three weeks.
For the Carignan, the harvest is vinified in whole bunches as to preserve the softness of the tannins.

Tasting notes:
A deep purple color.
In the mouth we find aromas of pepper, raspberry and candied cherries.
It is supple on the palate and of great finesse. With its soft and silky tannins, this cuvee can be enjoyed young.

Face à la Mer

Grape varieties: Mostly Grenache completed with Carignan.

Harvest and vinification:
Vines of Carignan older than 85 years.
The Grenache and Carignan vines are mainly on a windy land, as this grape varieties are "less fragile" than others.
Work on the soil and tillage only during the vegetative cycle of the vine.
Manual harvest, hand sorting and destemming.

Tasting notes:
An original profile, more floral, with glycine and violet notes.
On the palate, this wine offers a good roundness and solid aromas of small red fruits (redcurrant, cherry).
 




Les Ceps d'Emile

Grape varieties:
Mostly Carignan completed with Syrah

Harvest and vinification :
Vines of Carignan older than 85 years.
Work on the soil and tillage only during the vegetative cycle of the vine.
Manual harvest, hand sorting and destemming.
Ageing 6 months in French oak.
 
Alc. by Vol.: 13,5% Vol.

Tasting notes:
An intense cherry red robe with rubis hints.
The nose has aromas of small red fruits, with woody notes and a toasted bread, liquorice and chocolate.
The palate is full and delicate. The finish is long with intense notes of pepper.
 




Les Douves

Grenache, Syrah, Mourvèdre

Harvest and vinification:
Work on the soil and tillage only during the vegetative cycle of the vine.
Manual harvest, hand sorting and destemming.
Average yield: 30Hl / Ha.
Traditional vinification. Vatting lasts 30 days.
Ageing 12 months in French oak (20% are new barrels)
 
Alc. by Vol.: 14% Vol.

Tasting notes:
A deep purple color, and a delicately toasted nose with pepper notes.
On the palate, we can appreciate aromas of fresh blackcurrant.
The wine is structure by silky and well blended tannins.
 




Loblivia

Grape varieties :
80% Mourvèdre, 20% Grenache

Harvest and vinification :
Work on the soil and tillage only during the vegetative cycle of the vine.
Manual harvest, hand sorting and destemming.
Green harvesting.
Average yield: 28Hl / Ha.
Vatting lasts 40 days.
Ageing 14 months in French oak (50% are new barrels)
 
Alc. by Vol.: 14,5% Vol.

Tasting notes:
Deep garnet color.
The aromas will be even more intense if the wine is decanted.
They will develop blueberry jam flavours, with black pepper and vanilla notes.
The palate is full and sensual, with a very long finish.
